Eggs

Eggs have developed a bad reputation over the years.  Mercola has excellent information on eggs at www.Mercola.com.  I agree with him 100%.

I recommend that you cook the white (protein), but the yellows are best left uncooked (sunny side up / over-easy) or only lightly cooked (poached / soft boiled).  This preserves the powerful antioxidants of the egg yolk, especially Vitamin D and carotenoids.

You can even just eat the yellows raw by themselves and throw away the white.  If you have a concern about cholesterol, check it with a blood test through your doctor.  I use raw egg yolk mixed with raw Olive Oil, with lemon, salt, pepper, and Kefir, as a salad dressing, vegetable dip, and sandwich spread.  Delicious and nutritious!
